Flourless. Recipes for Naturally Gluten-Free Desserts by Nicole Spiridakis

I don’t recall how I came upon this book really, maybe I was browsing Amazon’s book selection, or maybe I saw it in a bookstore. The title got me interested. Flourless? Really?  Earlier in the year I had been thinking about baking healthier desserts (if there is such a thing) and started looking around for dessert cook books with easy recipes  that were relatively “healthy.”  My criteria for the cookbook had to be these: the recipes had to be easy, the ingredients had to be wholesome, and the baking had to be forgiving.  Given that I am not a big baker, I like my recipes to be simple. Flourless: Recipes for Naturally Gluten-free Desserts by Nicole Spiridakis seemed to have everything I was looking for. The reviews were very good too. So I decided to take a chance and bought it, and I have to say, this cookbook is awesome. Flourless has become one of my favorite dessert cookbooks!

The recipes are super easy to follow and have all-natural ingredients which in this case are good wholesome alternatives to flour. What I like about this cookbook is that the recipes are very flexible, meaning you can substitute a lot of the ingredients. For example, you can substitute almond flour for cashew flour, honey instead of maple syrup, oat flour instead of bran flour, butter instead of palm oil, and so on. Author Nicole Spiridakis actually encourages you to experiment with her recipes. I’ve tried a few of her recipes and they have all turned out great.

With mouthwatering photos and desserts such as Apple Tea Cake with Maple Glaze, Bourbon-Arborio Rice Pudding, and Seasonal Fruit Tart with Coconut Cream, this book is a treasure trove of dessert recipes made with healthy, all natural ingredients that are wonderful alternatives to using all-purpose flour.

My baker daughter Sri has made a few desserts from this book (reluctantly) as she prefers to bake with all purpose flour, but even she had to admit that the desserts tasted really good!  Couple of desserts that Sri made was the Chocolate Cake with Brown Sugar Butter cream, and the Mexican Hot Chocolate Cake with Chocolate-Buttermilk Frosting.

  1. Love this book Kalpana. I have tried the chocolate cakes. Comes out very well.
    I now substitute Almond meal in dessert recipes wherever it has flour. Comes out very well.
    Thanks for introducing us to flour-less baking. We all love the taste of these cakes!

  2. Awesome post! I have the cookbook but must admit (sadly), I’ve not made enough recipes from it! However, the couple of things I have made – the Banana-Cocoa Muffins and the Salted Caramel Pots de Creme have been outstanding! I already have my eye on a few things I think I might have time to bake these next few days…😜 Thanks, Kalpana, for the inspiration to revisit this fine cookbook!
