Italian-inspired Vegetarian Menu Celebrating Love. Happy Valentine’s Day! 2017

Happy Valentine’s Day! Valentine’s Day falls on a weekday this year – Tuesday, February 14th, 2017.  Kids have school, everyone is at work, but it is Valentine’s Day and no matter what day it falls on, it’s great to make this day that celebrates love, feel special for everyone.

Typically when I want to make a special dinner for the family, I like to make one item that is different and unusual, something we haven’t had before, something that I can experiment with.  And I also like to have another dish on the menu that I know how to make and the family has had before, this way if my experiment food fails, I still have a main course that tastes good and the family will enjoy.

Italian food is one of the most romantic cuisines in my opinion. So for this Valentine’s Day I am planning on making an Italian dish that is easy, yet decadent, delicious and delightful – pasta with delicious red marinara sauce all baked with gooey cheese and a bunch of  veggies. My “experiment” dish for this evening is an Asian pear salad with an unusual dressing. Here is what I have planned for this year’s Valentine’s Day Stay at Home Dinner.

Asian Pear and Avocado Salad with Micro greens and Garam Masala Syrup
from Gourmet Magazine, May 2005 Issue

Cheesy Stuffed Pasta Shells

Dark Chocolate Raspberry Bark with Candied Ginger
with Vanilla Ice-cream
