Zucchini Lemon Soup

This light and delicious zucchini soup has fresh lemon flavor and lots of vegetables. The entire family devoured this zucchini soup, I mean having two bowls each and cleaned the pot out completely. They loved it😋.  I hope you will too.

About the recipe

The inspiration for a lemon zucchini soup was my abundance of lemons. Loads of lemons in baskets were forcing me to get creative with using them and since it was a Sunday and our typical Sunday soup day I made sure my soup whichever I made had lemons. This zucchini lemon soup is what I conjured up.

Zucchini Lemon Soup

Ingredients:

  • 6 zucchinis finely chopped
  • 1 red bell pepper finely cut
  • 1 carrot finely cut into small pieces
  • 6 garlic cloves crushed
  • Juice of 2 lemons
  • 1 tsp dill or any herbs of your choice like thyme or oregano
  • 5 cups vegetable broth
  • Olive oil
  • 2-4 tbsp goat cheese or Greek yogurt (optional)
  • Add cooked barley for a more substantial soup (optional)

Directions:

  • In a large pot heat 2 tbsp olive oil. Add garlic and sautĂ© until tender. Add all the vegetables, herbs, salt and pepper. Add 1 cup of water, cover and cook vegetables until tender about 10 minutes.
  • After the vegetables are cooked add broth and heat through.  Turn the stove off. Lightly blend with an immersion blender.
  • Place the soup back on the stove. Add lemon juice and goat cheese and mix-in until fully incorporated and heat through. Soup is ready.

  • Serve soup with garnish of herbs.

    I just wanted to let you know that I made Zucchini lemon soup ( your recipe ) today for lunch. I made some changes. I used 2 carrots instead of one, one potato and the rest remained same. Thanks for the great new soup recipe and guess what? The soup turned out fantastic and very tasty. I didn’t use any cheese or Greek yogurt to top it off, just the seasoning only.

  5. My mom used to make a lot of lemonade syrup to use in summer as lemons were not that great in summer in India, and nothing tasted better in the scorching heat.
    Lemons taste good in asparagus soup too.

  6. YAY!! Another lemon recipe. It’s like you know we have far too many lemons STILL! Haha. We love zucchini too and I have never thought of combining the two!

    1. 😀 Yes, I get you! We are also still swimming in lemons! You know the best way to use up a large number of lemons is to make lemonade syrup. It is so delicious with fresh lemon juice and they last forever! I gave a couple of bottles to a couple of friends and they loved it, they said they dilute the syrup with some water or pellogrino and have it with ice when they come back from work and it’s so refreshing. Try it. Have fun with all your lemons 🍋🍋🍋

I stopped by trader joes yesterday, and my husband and I have been craving chicken piccata… I am going to use the zucchini as noodles and the tempeh as the chicken to make it vegetarian… and of course use up tons of lemons!! So than you for your inspiration with the last couple lemon posts!! Also— that lemonade syrup is making my mouth water!!! That sounds amazing!! Do you have a recipe for it?! (Like I said we have a TON of lemons, lol!).

          Just make sure to pick up a few bottles to store the syrup before hand. It is by far my favorite recipe for using all our bounty of lemons 🍋🍋! Last year I made 12 bottles and the kids were having lemonade for months and months after school. A small glass with sparkling mineral water and ice was more than enough to satisfy their thirst. I hope you will give it a try!!
