Swiss Chard and Paneer Curry

Swiss Chard and Paneer Curry

Ingredients:

  • 3 bunches of Swiss chard – about 6-8 cups finely chopped
  • 4 garlic cloves finely crushed
  • 1 tbsp ginger paste or shredded fresh ginger
  • 1 block paneer or tofu cut into small chunks
  • 1 green chili – seeds removed and cut length wise
  • 1 tsp cumin seeds
  • 2 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp chili powder or paprika
  • Cilantro for garnish
  • Juice of 1 lemon
  • Oil

Directions:

  • In a pan heat 1 tbsp oil and slightly brown paneer or tofu. Set aside.
  • In a large pot heat 2 tbsp oil. Add cumin seeds and toast until slightly brown and cumin aroma is released – about 2-3 seconds. Add garlic, all the spices and the green chili and toast in oil for a couple of seconds. Add the Swiss chard, paneer, salt and 1/2 to 1 cup water.
  • Cover pot and cook until Swiss chard is tender – about 10 minutes.

  • Turn the stove off. Add lemon juice and stir in.
  • Garnish with cilantro and serve Swiss chard curry with chapati or serve as a side dish. This will also make a great stuffing for burritos.

    1. Here in America our grocery stores sell fresh ginger that is ground into a paste – its sold along with fresh produce, its’ basically fresh ginger – you can easily shred the ginger and use it in this the recipe. I will update my instructions to explain this.
I don’t make my own paneer although it is very easy to make. Bring whole milk to a boil, then add lemon jiuice to warm milk and let it curdle. Once the milk separates strain it overnight in a cheesecloth. The next morning you will have paneer which can then be made into balls or a block. Hope this helps. Here is a great recipe with photos https://indianhealthyrecipes.com/how-to-make-paneer-cubes-at-home/

I loved your tomato bounty! What beautful photos you had on your blog!

      1. Thank you for your helpful comments. I had a colleague once who used to bring in a tomato and paneer curry dish for our gatherings, it was always delicious. The paneer sounds very similar to many of the homemade fresh cheeses and I have some in my refrigerator now. I cannot wait to make your recipe this week.
Thank you for your kind words about my tomato bounty and the photos.
