Zucchini Onion Tomato Soup

With just three vegetables that delicately flavor the soup this really is a simple and delicious soup. Zucchini, onion and tomato. That’s it. These three vegetables create a soup that is truly comforting.

Dinner at Padmini and Naresh’s.

It was an unexpected cool evening when we went over for a springtime April dinner at our friends Padmini and Naresh’s place last Saturday where our mutual friend Prasad and his daughter Anya joined us as well. Padmini explained as we walked in from a chilly outside how she specifically made a light soup to warm us all up.

At Padmini’s is where I had this wonderful zucchini soup which she served as an appetizer no less!  With a cheese platter and red wine, this zucchini soup was a welcome warming starter.  Because the soup was so light and delicately flavored it complimented the cheese board really well; and accompanied with a good glass of Pinot – the mood was set for a lovely evening ahead.

Gorgeous views from Padmini and Naresh’s family room created a beautiful backdrop for lively conversation.

A delicious and healthy meal made by Padmini included cabbage and broccoli stir fry,  spiced black-eyed peas, corn and tomato salad, spicy chicken curry, tomato rice, and cucumber yogurt raita.

Zucchini Onion Tomato Soup
serves 6

Ingredients:

  • 2-3 zucchini finely cut
  • 1 large yellow onion finely cut
  • 1 tomatoe finely cut
  • 1 clove garlic minced
  • Salt and pepper
  • 1 tbsp butter
  • 5 cups water

Directions:

  • In a large pot warm 2-3 tbsp butter until melted. Add the onions and fry until translucent. Next add the tomatoes and cook until slightly tender about 3 minutes. Add the cut zucchini, salt and pepper. Cover and cook until the zucchini is tender about 5-7minutes. Next add the water or broth and bring to a boil.
  • Turn the stove off and blend into a smooth consistency.  Warm soup through before serving.
  • Serve soup with garnish of fresh black pepper.
