How is your summer going? Staying cool? Ready for school to start?
For many kids summertime means hanging out at the pool and heading to pool parties around town. Well, if you are like me and would like to offer something healthier than chips and salsa and other such snack foods for all those ravenous pool swimmers, then these delicious and healthy sliders is your answer. These goat cheese and tomato sliders are cool, tasty, and everyone will love them adults AND kids!
Just take a few hamburger buns. slather them in pesto and goat cheese, top with fresh tomato and a few thinly sliced onions, and voila! You have a delicious vegetarian slider that everyone will enjoy.
Because a pool party does require some form of “junk food” I served my sliders with baked onion rings and blistered Padron peppers. And because I just can’t help myself, I just had to add another healthy option – a simple tossed green salad! Friends brought fresh cut watermelon for dessert which completed our healthy and delectable pool party spread.
Guess what folks? Our ravenous pool partiers cleaned out everything!

Goat Cheese and Tomato Sliders
- Hamburger buns
- Fresh goat cheese
- Tomatoes thinly sliced
- Onions thinly sliced
- Pesto. I buy mine from Trader Joe’s.
- Salt and pepper
- Spread pesto on a slice of bun. Spread goat cheese on the other slice.
- Top the goat cheese with sliced tomato, onions, salt and pepper.
- Cover with the other slice of bun.
- Serve with salad or chips of your choice.
