Fresh Fig Upside Down Cake

The cake in this recipe made with creamy Greek yogurt, vanilla and orange zest is by itself so good, then add in fresh figs to this already delicious cake and you get this really really good Fresh Fig Upside Down Cake.

Fresh Fig Upside Down Cake

Ingredients:

  • 1 1/2 cups of all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 1/2 cups sugar
  • 1/2 cup softened butter, plus about 1 tsp softened butter for pan
  • 2 large eggs
  • 1 cup Greek yogurt
  • 1/4 cup orange juice
  • 2 tbsp fresh grated orange zest
  • 2 tsp Vanilla
  • 1 tbsp orange liqueur (optional)

Directions:

  • Preheat oven to 350 degrees. Butter a 9-inch round cake pan, line bottom with parchment paper and butter it. Flour inside of pan, tapping excess out.
  • Place the sliced figs at the bottom of cake pan. Sprinkle 2-3 tbsp sugar over the figs and pour 1/4 cup orange juice and 1 tbsp orange liqueur over the figs. Set aside.

  • In a medium bowl sift together flour, baking powder, baking soda, and salt.

  • In another bowl whip together 1 cup Greek yogurt, 1/2 cup softened butter, orange zest, eggs, vanilla, and sugar until creamy.

  • Combine the liquid mixture with the flour mixture.

  • Pour the cake batter into the baking dish with the figs and bake for 45-50 minutes until a toothpick inserted comes out clean.

  • Once cake is done, let cool for 15 minutes before taking out of the pan. Slowly remove the parchment paper so as not to disrupt the figs on the cake. Let the cake cool for 1 hour before serving.

  • Dust with powdered sugar and serve.
