Thanksgiving 2019 Vegetarian Dinner with Family and Friends

Happy Saturday!  I hope you had a great Thanksgiving! Ours was busy cooking all day until dinner time at which time we had friends join us on this very special holiday.  

Not your traditional Thanksgiving Faire

Being vegetarian coming up with a Thanksgiving dinner tends to be tough for me as we don’t do the usual turkey, gravy, mashed potatoes, or cranberry sauce.  However if one is willing to venture away from the traditional Thanksgiving faire there is no shortage of vegetarian options for a delicious and festive Thanksgiving dinner.

Vegetarian Thanksgiving Menu 2019

This year for our Thanksgiving menu I decided to go the Mexican route. For our main dish I made these overly stuffed chille rellenos stuffed with in-season delicata squash, sweet potatoes and mustard greens freshly picked from my veggie patch. Super delicious and filling these peppers turned out!

For our sides we had Mexican rice, yellow beets, and a giant platter of roasted veggies, and my friend Shalini brought a white bean and kale casserole.

For appetizers I kept it simple because we always get stuffed on starters and end up skimping on dinner.  So I made a simple cheese platter with a variety of hard and soft cheeses, home-cured olives, and spiced cashews.

Dessert was a big bowl of fresh cut pineapple and persimmons and an assortment of store bought ice cream flavors served with Pecan shortbread cookies and lemon cookies that my eldest daughter baked on Thanksgiving morning. Our oven was going nonstop all day on Thanksgiving day!  Cookies were being baked, roasted veggies roasting, and my chille rellenos took some time to bake too. I think the oven was going nonstop for almost eight hours!  Thankfully my oven didn’t give out on me! Its old and needs replacing but I am holding onto it until it actually does conk out.

Oh Prasad is a hoot and I just can’t help but laugh how he loves to tell the the story of you and me and gets so much fun out of it!! !😘😘 Thank you for bringing the white bean casserole.
