Happy Friday!
In the garden this week my focus continued on winter pruning. I moved up to my veggie patch to prune my rose bushes and to see how my veggies were doing, and boy was I surprised to see them thriving. Here is a look at my veggie patch with its pea shoots, green peas, and super greens.
My sugar snap peas were growing like so well!
Lots of pea blossoms showed the promise of more peas yet to form.
So many pods to harvest that I was getting tiered of picking. Some were hiding under the vines.
Harvested a basket full of peas on this afternoon.
Made a delicious sugar snap pea stir fry with the fresh picked harvest.
Sugar Snap Peas Stir Fry Recipe
Ingredients:
- 1 lb Sugar snap peas
- 2-3 garlic cloves minced
- Olive oil
- Salt and pepper
Directions:
- In a saute pan warm 2 tbsp olive oil and fry the garlic for a couple of seconds. Add the sugar snap peas and stir fry on high heat until the peas are charred, about 5-7 minutes.
- Add salt and pepper to taste and serve warm for a delicious appetizer or afternoon snack.
