Valentine’s Dinner with the Family 2020

Happy Tuesday!

How was you Valentine’s Day last Friday? Celebrated it with the family? Did you go out for a special dinner? No matter what you do, it’s a day when we can take the extra time to acknowledge that special one or ones in our lives. Today I wanted to share with you this fun menu my twins and I prepared for our V-day dinner.

About the menu

I wanted to share this menu because its not just great for a special family dinner but makes for a wonderful menu with friends as well. The best part of this menu is that every one of these dishes can be prepared well in advance so that when company arrives you can relax.

A toast to Valentine’s Day

Since my twins were home on school break last week they helped with our menu even made some of the dishes. Here is a look at our V-Day dinner with the family.

To start our dinner Anjali made a delicious sweet and sour mocktail called pomegranate blood orange sunrise that was sweet and decadent. 

Easy Antipasti Platter

Anjali also made our first course which was a phenomenal antipasti platter!  We picked up all the ingredients from Whole Foods and assembled them in pretty platters and plates.

Stuffed Pasta Shells

I made Stuffed Pasta Shells for our main course.  For added interest I also made an Indian potato and bell pepper curry that I surrounded the pasta shells with and then baked them all together.

Pot de Creme for dessert

Rani put a lot of love and effort into her Caramel Pot de Creme dessert.  She said though there were a lot of steps to follow it was an easy recipe with easy to find ingredients. Butterscotch Pot de Creme on epicurious.com.

An Awesome Menu for Dinner with Friends Too

This menu is awesome and makes for a great Saturday night dinner with friends too.  The best part of it is how low-stress it is.  The mocktails just need the juices to be mixed together. You can even add a splash of vodka or white wine to turn it into a cocktail.

The antipasti platter is easy to prepare especially if you just stop by the grocery store and pick up all the ingredients.  Then have fun plating them!

As for the pasta bake? Actually this dish can be made well in advance, in fact it tastes better when baked the day before or the morning of, giving the stuffing a chance to settle which tastes even more delicious.

Similarly the butterscotch pot de creme can be made the night before or the morning of your dinner and then left in the fridge to cool. Serve with berries and whipped cream for a restaurant style dessert!
