Indian Style Eggs & Parisian Style Sandwich

Good Thursday everyone. How is your week so far?  Quiet and calm? Our week started with everyone working from home and online schooling.  The kids are in a routine with their remote learning, although they did grumble that they didn’t like it. They miss school.  You know, the silver lining with this stay at home order is that now kids appreciate school a lot more 😀.  Even Hitesh had a few sighs of how he misses the social aspect and human touch that work provides.  Nonetheless we are staying put at home to ride this out.

Indian style eggs for lunch

For lunch time on Monday I made Indian style eggs and served them with a side of chapati and fruit, but you could easily serve these eggs with a side of buttered toast. Indian eggs are scrambles eggs made with green chilies, ginger, garlic and onions that are sauted in ghee.  Add in salt and pepper and garnish with plenty of fresh cilantro.  Sometimes I add turmeric and asafetida but I left the spices out this time, and the eggs tasted amazing nonetheless!  Uniquely delicious this version of eggs is!  Here is the recipe Indian style scrambled eggs.

Parisian Style Veggie Sandwich

For our lunch yesterday I made one of my favorite veggie sandwiches that I fell in love with while on holiday in Paris.  I had forgotten about it until I noticed that the recipe was popping up in my “top posts” category.   Well, that’s all it took to inspire me to make it again for the family for lunch yesterday.

Loaded with good for you ingredients such as hard-boiled eggs, avocado, radish, lettuce, tomato, onions, and feta, this sandwich will for sure transport you to a cafe far away.
