Okay, I know you’re wondering what is this soup? Having just come back from Kenya and having had the most delicious food there,I’ve been eager to try and make some of the local cuisine. This one is really easy and delicious, it’s Mombasa in a bowl.
Zucchini onion soup is the soup to make with the delicious summer squash available at the markets and even in our own gardens right now. Folks, this zucchini onion soup turned out so good that we were having seconds and thirds and we even finished off the entire pot!
With just three vegetables that delicately flavor the soup this really is a simple and delicious soup. Zucchini, onion and tomato. That’s it. These three vegetables create a soup that is truly comforting.
The family loved loved this zucchini soup when I made it with flavorful spices, peppers and potatoes. Rani even requested a few times that I make this soup again. I told her I’ll make it as many times as she wants when we receive our giant zucchini from Karen Aunty’s veggie garden 😃.
This light and delicious zucchini soup has fresh lemon flavor and lots of vegetables. The entire family devoured this zucchini soup, I mean having two bowls each and cleaned the pot out completely. They loved it😋. I hope you will too.
