Stuffed Eggplant with Spicy Almond Meal

Stuffed eggplant is a popular Indian curry with many variations. I am mostly familiar with two versions of stuffed eggplants – one is my Mom-in-law’s recipe which involves stuffing eggplants with chickpea flour and spices, the other is a South Indian Tamil version in which eggplants are stuffed with lentils, shredded coconut and spices. In this new recipe however I thought I would stuff the eggplants with a spicy almond meal and I tell you folks, this has to be the easiest and my new favorite stuffed eggplant curry!

Asparagus Leek Soup

A soup so veggie flavorful that it just needs salt and pepper. Leeks and asparagus both have so much flavor on their own that you pretty much don’t need anything else in this soup. Sauté leeks in olive oil, add the asparagus, salt and pepper and broth. Cook until tender.  Blend for a creamy soup or keep it chunky for a soup that is light, healthy and delicious. Tangy and delicious, thick and creamy, quick and easy, this tomato soup takes just minutes to cook. I made this tomato bisque for a lunch with two of my dear friends last week and since we were getting together for a little Valentine’s Day celebration I wanted to make a soup that was red in color and tomato soup is what we all think of for a red soup.
