Simple Quesadilla

This is my go-to recipe when I want to make a quick quesadilla. Every time I’ve served this simple quesadilla to family and guests I’ve always received a “Wow, this is delicious” reaction.  I’ve made fancy variations of this recipe by adding sautéed mushrooms and roasted veggies and other condiments, I’ve even added fresh chopped tomatoes, but honestly, I don’t get that unanimous “Wow” reaction that I get when I make my original simple quesadilla.  What makes it so good is the minimal amount of ingredients in it. Here is the recipe. After days and weeks of solid good rain here in Northern California, we finally see some sunshine 😊🌞.  It seriously feels like spring – Not! Birds are chirping as if it is spring, little do they know that rain and cool temperatures are coming back very soon – within a few days 🌧.

Braised Warm Sugar Snap Peas & Edamame Salad

Warm Sugar Snap Peas & Edamame Salad

Ingredients:

  • 2 cups sugar snap peas roughly cut in halves. About 8 oz of sugar snap peas
  • 1 cups shelled edamame beans. I buy mine frozen and already cooked from Trader Joe’s
  • 1 clove garlic crushed
  • Juice of 1/2 small lemon
  • 1/2 tsp chopped mint leaves
  • Salt and pepper

Vegetarian Chili

Vegetarian Chili
makes 8 servings

Ingredients:

  • 4 cans kidney beans drained and rinsed
  • 1 8 oz can tomato sauce
  • 1 8 oz can stewed tomatoes
  • 6 garlic cloves crushed
  • 1 large onion chopped (1 1/2 cups onions)
  • 1 cup chopped bell peppers – or 1 large bell pepper
  • 1 cup chopped celery about 1 stalk
  • 1 cup peeled and chopped carrots – 1 carrot
  • 1 bunch cilantro chopped – 4 tbsp
  • 3 tbsp taco seasoning
  • 4 bay leaves if you have
  • 1 tsp Mexican oregano but not needed
  • Salt
  • Oil
  • Avocado for garnish
  • 1 cup Sour cream for garnish
  • 1 cup shredded Cheddar cheese for garnish
