This is my go-to recipe when I want to make a quick quesadilla. Every time I’ve served this simple quesadilla to family and guests I’ve always received a “Wow, this is delicious” reaction. I’ve made fancy variations of this recipe by adding sautéed mushrooms and roasted veggies and other condiments, I’ve even added fresh chopped tomatoes, but honestly, I don’t get that unanimous “Wow” reaction that I get when I make my original simple quesadilla. Warm Sugar Snap Peas & Edamame Salad
Ingredients:
- 2 cups sugar snap peas roughly cut in halves. About 8 oz of sugar snap peas
- 1 cups shelled edamame beans. I buy mine frozen and already cooked from Trader Joe’s
- 1 clove garlic crushed
- Juice of 1/2 small lemon
- 1/2 tsp chopped mint leaves
- Salt and pepper

Vegetarian Chili
Vegetarian Chili
makes 8 servings
Ingredients:
- 4 cans kidney beans drained and rinsed
- 1 8 oz can tomato sauce
- 1 8 oz can stewed tomatoes
- 6 garlic cloves crushed
- 1 large onion chopped (1 1/2 cups onions)
- 1 cup chopped bell peppers – or 1 large bell pepper
- 1 cup chopped celery about 1 stalk
- 1 cup peeled and chopped carrots – 1 carrot
- 1 bunch cilantro chopped – 4 tbsp
- 3 tbsp taco seasoning
- 4 bay leaves if you have
- 1 tsp Mexican oregano but not needed
- Salt
- Oil
- Avocado for garnish
- 1 cup Sour cream for garnish
- 1 cup shredded Cheddar cheese for garnish
