Roasted heirloom tomatoes and shallots have so much flavor, that this salad requires no dressing, just toss with salad greens and balsamic vinegar.
Folks, for this salad to taste outstanding it really helps to use heirloom tomatoes. Heirloom tomatoes give the salad that unique sweet and tangy juicy tomato flavor which is just a taste onto it’s own.
Roasted Heirloom Tomato & Shallot Salad
Ingredients:
- 1 large heirloom tomato cut into big wedges
- 1 shallot finely chopped
- 3 tbsp olive oil
- Salt and pepper
- 1 tbsp balsamic vinegar
- 6 cups spring greens mix
- Goat Cheese (optional)
Directions:

- When ready to serve the salad toss roasted heirloom tomato and shallot dip with all the salad greens. Drizzle with balsamic vinegar, add goat cheese and toss.
Serve salad immediately.
