Folks, for this salad to taste outstanding it really helps to use heirloom tomatoes. Heirloom tomatoes give the salad that unique sweet and tangy juicy tomato flavor which is just a taste onto it’s own.
Roasted Heirloom Tomato & Shallot Salad
- 1 large heirloom tomato cut into big wedges
- 1 shallot finely chopped
- 3 tbsp olive oil
- Salt and pepper
- 1 tbsp balsamic vinegar
- 6 cups spring greens mix
- Goat Cheese (optional)

- When ready to serve the salad toss roasted heirloom tomato and shallot dip with all the salad greens. Drizzle with balsamic vinegar, add goat cheese and toss.
Serve salad immediately.
