Hello and Happy New Week! How was your Easter weekend? Good? Relaxing? Ready for the new week? Around here Spring is in full swing 🌺 with warm temperatures, sunny with a cool breeze. To celebrate Spring and all things floral and colorful, I had a few lady friends over for a vegetarian pot luck lunch last Friday 💐.

Spring Pot Luck Lunch with the Ladies
A pot luck lunch is the best way to enjoy a variety of cuisines all lovingly prepared by dear friends 💕. Each and every dish was outstanding! Talk about a nutritious, delicious plant forward menu – AHMAZING feast!
On the Menu: Moong bean dhal, Spinach and lentil kootu (stew), Avial – mixed veggies in coconut sauce, Fenugreek fried rice, Poha (pressed rice pilaf), Cabbage saute with turmeric, Yogurt raita, and Vermicelli paysam – pudding. All delicious and prepared by friends 💕.
Dessert of fresh fruit, vermicelli payasam (vermicelli milk pudding) and lemon pistachio olive oil cake from our local bakery.
