Pesto Tea Sandwiches with Crisp Sautéed Asparagus

These are delicious pesto sandwiches with creamy avocado and bell peppers on whole wheat bread.  

The inspiration

My friend Roli made these tea sandwiches for an afternoon get together and served them with crisp sautéed asparagus.  Talk about scrumptious and healthy with ample dose of veggies for the day.

Easy recipe with delicious results

These sandwiches are so good folks. Really the only part that involves a little extra effort is stir frying the asparagus. The sandwiches themselves are as easy as it gets. Just cut up peppers and avocado and slather slices of bread with pesto. Then assemble the sandwich and serve along side sauted asparagus. It’s that easy.

Wouldn’t your kids love this waiting for them when they come home from school!

Cook’s Notes:  Feel free to add slices of Swiss cheese or any other cheese to turn these sandwiches into an even more filling meal.  Serve with lemonade and fresh fruit for a light and nutritious lunch option.
