An easy veggie sandwich made with marinated artichokes, briny olives, jarred peppers, and loads of veggies. This is a delicious sandwich that is full of flavor from all the pickled veggies.
It was one of those days when I needed to make something quick for lunch with a delicious outcome. I didn’t have time to head to the store and had to improvise and make it with what I already had in the pantry/fridge. Enter this veggie sandwich.
The sandwich is so easy to put together that you’ll make this again and again. It’s got marinated artichokes, olives, jarred red bell pepper, cheese, onions and honey mustard spread. Add in fresh lettuce and tomatoes too if you have. Or have cream cheese dip? Spread that too.
All the flavors comes from the marinated veggies. They taste all tangy and sweet and full of pickled veggie flavors. It’s so delicious you’ll turn to this recipe the next time your’e out of fresh sandwich ingredients.
Everything Marinated Veggie Sandwich
2 slices of whole wheat or whole grain bread
Cheese of your choice. I used pepper jack
Onion thinly sliced
Marinated artichokes – about 2 hearts
Jarred bell pepper – about 1 large half
Olives cut in half as much as you want
Honey Dijon mustard
Any other cheese spread or pesto if you have in the fridge
Salt and pepper
Spread the mustard on the two slices of bread. Then top one slice with cheese. Next the jarred pepper. The gently mash the artichoke heart and spread it over the pepper. Top with olives and sliced onions.
Add the lettuce and tomato if using. Sprinkle salt and pepper. Top with the 2nd sliced of bread. Cut in half and wrap with plastic wrap and place in fridge until ready to eat. Or eat right away!
