This spring time soup is made with all the veggies that are at their peak now. Green onions – lots of it, leeks, asparagus, kohlrabi and thyme. That’s all you need to make this delicious creamy soup.

Lately my farmbox has had lots of tender plump green onions and asparagus along with kohlrabi and leeks. Really this was my inspiration for my soup. The main flavor in this soup is green onions and leeks and lots of it! I used 2 bunches of green onions for almost 3-4 cups of green onions. And about a cup of leeks finely chopped.

Then a big bunch of plump asparagus about 4 cups, and 2 kohlrabi bulbs are added. Now if you dont’ have kohlrabi substitute with 2 potatoes. I added the kohlrabi for the creamy texture but a potato or two will do the same.


First you saute the onions and leeks in butter then add in the asparagus and kohlrabi, salt and pepper and cook until the veggies are tender. Next add the broth and thyme and bring to a low boil. That’s it! Blend into a creamy smooth texture and serve.





All the flavor comes from the green onions and the creamy texture comes from the kohlrabi. A low calorie healthy soup that looks like its loaded with cream. It’s really delicious on a cool spring evening. Give it a try!

Green Onion Leek & Asparagus Kohlrabi Soup
Ingredients:
2 bunches of green onion finely chopped
2 leeks white and light green parts finely cut
2 kohlrabi bulbs peeled and finely cut
1 bunch of asparagus finely cut
1 bunch of thyme
Butter
Olive oil
Salt and pepper
1 carton vegetable broth or 5 cups water
Directions:
In a large pot warm 2 tbsp butter with 1 tbsp olive oil. Add the green onions and leeks and cook until tender about 5-10 minutes,.


Next add the asparagus and kohlrabi plus salt to taste and 1/2 tsp black pepper. Cook the veggies until tender about 15 minutes stirring ocasionaly.


Once the veggies are tender add the thyme bundle and veggie broth. Bring to a low boil. Turn the stove off.

In batches and be careful as the soup is hot! Blend until creamy. Taste for salt and adjust accordingly,

Serve warm with garnish of green onions and sprinkle of chili flakes.
