Tuscan Summer Dinner with Radhika and Me

It was my birthday in July and I celebrated it all month long 😀. The bookend to my special birthday month was an intimate dinner for two with my dear friend Radhika last weekend. A beautiful evening of heartfelt conversation and a delicious Mediterranean style Tuscan vegan dinner in her charming garden.

Though Radhika’s garden was in between bloom cycle, it was still brimming with bursts of color against a lush green backdrop of leaves and fauna.

Mediterranean Tuscan Summer vegan dinner

Radhika had prepared a Tuscan inspired dinner for the evening with goat cheese and crackers as starters. Followed by cucumber salad with sumac, baby zucchini and tomato salad, Tuscan style stew made with tofu, butternut squash and cannellini beans, served alongside quinoa. All the dishes were delicious!

On the Menu:

Berry spritzer
Feta, goat cheese and rice crackers
Cucumber salad with sumac
Baby zucchini and tomato salad
Tuscan stew with squash and tofu
Berry and coconut milk Sorbet
