Happy Friday! I hope you are looking forward to a fun weekend! With summer in full swing I wanted to share with you today a menu idea for summer lunch in the garden. This menu is easy, beautiful, and delicious. Perfect for a summertime gathering in the garden.

The occasion
My daughter’s husband’s grandma and uncle were visiting from India recently and as is customary in the Indian culture we usually invite the visiting family for a special dinner or lunch. Enter this family summer soiree in the garden.


With the garden in full bloom it seemed like the perfect opportunity to show it off and host a lunch for the family.





The menu
Rather than make an Indian feast I decided to keep it lighter and created a more picnic like menu. I made veggie sandwiches – two kinds – one was cucumber sandwiches and the other was my signature veggie sandwiches with artichoke cream cheese.

To accompany the sandwiches I made a quinoa salad packed with veggies such as bell peppers, cucumbers, onions, arugula, chick peas, and olives all tossed with a light vinaigrette and feta cheese.

To give the lunch a little bit of Indian flair I ordered samosas and dhokla from our local Indian grocery store.

Everything was decorated with flowers, herbs and garnishes from the garden which made the entire meal look extra pretty 🌺




For drinks we had our orange and ginger ale mocktail, rose wine, red wine and sodas too.

Then for dessert continuing with the light simmer picnic theme we had a giant bowl of fresh cut fruit accompanied by mango sorbet with a splash of port. Boy was the mango sorbet and port a huge hit!! Everyone loved it!


Then ending the afternoon with Indian chai.

Mexican salad – Shraddha
Artichoke cream cheese veggie sandwich
Cucumber sandwich ( just butter, sliced cucumber, salt and pepper)
Samosas – store bought
Dhokla – catered
Khandvi – Indian chick pea dumplings – catered
Orange ginger mocktail
Dessert:
Fresh cut fruit – Priya
Mango Sorbet with Port
Chai
