Here is a recipe for a very simple salad made extra hefty with the addition of cannellini beans and feta cheese all tossed together in a champagne vinaigrette. Served with a slice of baguette this is a very French salad in honor of the 2024 Olympics in Paris, France this year 🏊🏽🇫🇷🥗🥖.
Arugula and Cannellini Salad with Feta and Champagne Vinaigrette
Ingredients:
1 bag of arugula greens (about 4 cups)
1 small red onion thinly sliced
Feta cheese as much as you want (or you can leave it out)
3-4 small sweet peppers
1 can cannellini beans rinsed and drained
Champagne Vinaigrette – champagne vineger (or use white vineger), honey or maple syrup, Dijon mustard, olive oil, salt and pepper.
Directions:
In a large salad bowl place the cannellini beans. Add 2 tbsp of dressing and mix in.
Top with arugula, peppers, onions and feta. Cover and set aside until ready to serve.
Before serving toss salad with extra dressing. Serve immediately with side of baguette.
