Apple zucchini salad tastes great, looks great, and is sweet and refreshing too.
I made this apple zucchini salad for a lunch I had with two of my dear friends recently. Since its apple season and zucchini can still be found in abundance at the markets I combined these two to make this delicious crunchy, sweet salad.

In this salad its the vinaigrette that adds a nice tang and the apples give a lovely sweet flavor boost to the dish. Give it a try!
Apple Zucchini Salad
serves 3-4
Ingredients:
- 2 sweet juicy apples cut into thin slices. I used Fuji and Gala.
- 1 zucchini cut into slices
- 1 shallot or 1/2 small onion thinly sliced
- 1 tsp dried oregano
- White balsamic vinaigretteWhite balsamic vinaigrette
- 4 tbsp white balsamic vinegar
- 4 tbsp olive oil
- 1 clove garlic
- Salt and pepper
- or Honey vinaigrette
- 4 tbsp vinegar
- 4 tbsp olive oil
- 1 tbsp honey
- Salt and pepper
Directions:
- Make the vinaigrette and set aside.
- In a bowl toss together cut apples, zucchini and shallot with 1 tsp dried oregano.
- Next add the vinaigrette and mix into the veggies. Cover and chill in the refrigerator for at least 30-minutes for the salad to marinate, preferably longer.
- Serve chilled with garnish of fresh herbs.
Cook’s Notes: To turn the apple zucchini salad into a tossed- green salad, simply add some lettuce, spinach, kale or any salad greens of your choice and toss all ingredients together before serving.
