Apple Zucchini Salad

Apples are in abundance everywhere I look this fall season. I’ve already made an apple crisp, and apple ginger cake, and I’ve been eating an apple a day to keep the doctor away, yet I have lots of apples in my fruit basket. That’s why when I stopped by my friend Rose’s place for lunch to celebrate our mutual friend Devi’s birthday, I came up with a recipe that used lots of apples – an apple zucchini salad.

Butternut squash soup – Rose
Scones – Rose
Apple zucchini salad – Me
Crustless quiche with asparagus, gruyere and cheddar cheese – Rose
Mango rice – Devi
Fresh cut fruit – Devi
Peach blueberry crumble – Rose

Apple zucchini salad tastes great, looks great, and is sweet and refreshing too. The vinaigrette adds a nice tang and the apples give a lovely sweet flavor boost to the dish. Give it a try!


Apple Zucchini Salad
serves 3-4


  • 2 sweet juicy apples cut into thin slices.  I used Fuji and Gala.
  • 1 zucchini cut into slices
  • 1 shallot or 1/2 small onion thinly sliced
  • 1 tsp dried oregano
  • White balsamic vinaigretteWhite balsamic vinaigrette
    • 4 tbsp white balsamic vinegar
    • 4 tbsp olive oil
    • 1 clove garlic
    • Salt and pepper
  • or Honey vinaigrette
    • 4 tbsp vinegar
    • 4 tbsp olive oil
    • 1 tbsp honey
    • Salt and pepper


  • Make the vinaigrette and set aside.
  • In a bowl toss together cut apples, zucchini and shallot with 1 tsp dried oregano.
  • Next add the vinaigrette and mix into the veggies. Cover and chill in the refrigerator for at least 30-minutes for the salad to marinate, preferably longer.
  • Serve chilled with garnish of fresh herbs.



Cook’s Notes:  To turn the apple zucchini salad into a tossed- green salad, simply add some lettuce, spinach, kale or any salad greens of your choice and toss all ingredients together before serving.

    Can you make Apple tholku the way Rsji used to make, you can mix with rice, sandwich and best of all Thier sadham!

    1. Thank you! Honestly I was going for a vegetable that would have the same crunch/texture as apples that wouldnt add its own flavor and compete with the apple flavor, and zucchini worked perfectly. I hope you like it!
