Cucumber Salad with Fresh Herbs and White Wine Vinegar

I made this cucumber salad with fresh picked cucumbers from my garden for a lunch I had back in July.  This salad is a great way to use up a large quantity of cucumbers.

IMG_2287It was a gorgeous summer day on this July Tuesday when friends Georgina and Rose stopped by to celebrate my birthday. Quiche accompanied by a couple of salads was a perfect summer lunch.

I made a tossed green salad and a cucumber salad to go along with a tomato and corn quiche that Rose brought.  At this festive lunch we even had Rose’s delicious blueberry upside down corn cake and the best ever gingerbread made by Georgina.

While making the cucumber salad I did wonder like many others it seems, if white wine vinegar is the same as white vinegar.  I found the answer to this question on cooking.stackexchange.com. This exact question was presented to them and the answer was very clear:  “White wine vinegar is made by allowing white wine to turn to vinegar. It has a much more complex flavor profile. White wine vinegar will have a more distinctive flavor preserving some of the characteristics of the wine it was made from. It is also frequently less sour (acidic) than distilled white vinegar.  White vinegar on the other hand (also known as distilled vinegar) is made of acetic acid diluted in distilled water. Its flavor is simple—it’s just sour.”

If you want flavor in your salad go for white wine vinegar. You can find white wine vinegar at Farmer’s Markets, specialty vinegar and olive oil shops, and at many wineries. Don’t have white wine vinegar?  You can use apple cider vinegar or rice vinegar and add 1/2 tsp sugar to give the salad a nice mild sweet flavor. Here is my recipe for cucumber salad with herbs and white wine vinegar.

Cucumber Salad with Fresh Herbs and White Wine Vinegar:

Ingredients:

  • 2 medium cucumbers peeled and chopped into small cubes.
  • Combination of fresh herbs such as thyme, mint, chives, dill. 1 tbsp
  • 1 tbsp white wine vinegar
  • Salt and pepper

Directions:

  • Peel and cut cucumber into cubes and place in a bowl.
  • Top with chopped fresh herbs.
  • Splash vinegar and add salt and pepper to taste.
  • Mix the salad and set aside for up to 30 minutes for the flavors to marinate.
  • Serve and enjoy.
