Indianized Savory French Toast Casserole

Made with white bread, eggs, milk and all things Indian inspired such as onions, green chilies, ginger, garlic, cilantro, cumin, coriander and turmeric, this is not your ordinary egg casserole. It’s packed with flavor and delicious!

Fluffy and pillowy, savory and delicious, I was planning on serving the casserole with chutney or hot sauce but the family said it was so flavorful it didn’t need anything else.

The best part? You can prep it ahead of time and bake it whenever you’re ready.

The inspiration

I found the recipe in the September edition of Real Simple magazine and the image just grabbed my attention – it was colorful and looked so good!

Then when I saw that it had all the ingredients I like – onions, cilantro, ginger and green chilies! I had to give the recipe a try. It was so easy to make and the final dish so beautiful to look at, you have to give it a try!

Easy recipe

Folks, the recipe is so easy. First layer the bread on a buttered casserole dish. Next whip up eggs with milk, cilantro, onion, green chilies, grated ginger, salt and pepper plus all the spices. Evenly pour the egg mixture over the bread and bake. That’s it for a delicious Indian French toast casserole. Nutritious, flavorful and filling, give this recipe a try.

Indian Savory French Toast Casserole
with inspiration from Real Simple Magazine

Ingredients:

10 eggs
1 1/2 cups milk or 1 cup cream
1 onion finely cut
3 tbsp fresh cilantro finely cut
1 clove garlic minced
1 inch piece of ginger peeled and grated
1-4 green chilies finely cut – remove seeds to keep it mild
1 tsp cumin powder
1 tsp coriander powder
1/2 tsp turmeric powder
1 tsp salt
1/2 tsp black pepper
Butter
10 slices of white bread
Grated cheese (optional) as much as you want

Directions:

Preheat oven to 350F. Butter one side of bread slices and layer them butter side down on a large casserole dish.

In a large bowl whisk together eggs and milk with salt, pepper and all the spices. Add in all the veggies and mix in. Pour the mixture evenly over all the bread slices. Sprinkle cheese and extra black pepper. Set aside for at least 10 minutes before baking.

Place in oven and bake for 40 minutes until the edges are bubbling and golden and a knife inserted in the center bread slice comes out clean. Remove from oven and let cool 10 minutes before serving.
