One of my twins Rani got in the mood to make some chocolate cupcakes a few weekends ago. But Rani is a picky one; she likes dark chocolate, even in her cupcakes. YES! I thought. I am going to be treated to an adult cupcake made with dark chocolate!
Now as you may know, there are countless chocolate cupcake recipes out there, hundreds of recipes actually. Yet somehow Rani was able to narrow down her search to this one recipe from Gimmesomeoven.com. She asked me to take a look at the recipe for 1: do we have the ingredients and 2: for approval – i.e. is this an easy recipe to follow. I gave her the thumbs up 👍. This is how Rani’s chocolate cupcakes turned out. Pretty cool!

The one addition that Rani did make is filling the cupcakes with salted caramel. Directions for salted caramel filling below.

Make the cupcakes and ganache: Follow the directions according to gimmesomeven.com. Salted Dark Chocolate Cupcakes from gimmesomeoven.com.
Add the Caramel Filling: Purchase any salted caramel sauce from the grocery store. To add caramel filling in the cupcakes, before piping the ganache poke a hole in the center of the cooled cupcake. Fill with 1 tsp caramel sauce. Next pipe the ganache on top of the cupcakes. Salted Dark Chocolate with Salted Caramel is done!
Cook’s Notes: Rani followed the recipes for the cupcake and ganache exactly as instructed. She said the directions though looked complicated, were actually easy to follow. The only remark she made is that even though the batter was supposed to be enough for 24 cupcakes, it was only enough for 18.
