Burrata and Mango with Fresh Basil 🥭🌿

Creamy burrata cheese and mango – I know! What a unique combination! This one is for all you folks who love a good all natural dessert made with good for you ingredients. A wonderful flavor combination that makes your brain work (Mmm interesting combo 🤔) and your taste buds sing 😋🎶. Give it a try!

The inspiration

My friend Anjali and I have been talking about getting together for a long time, but with everyone’s busy schedule it was difficult. Then we decided let’s just pick a day that works for both no matter what’s going on and let’s just meet, and we made it happen on a beautiful May afternoon last week.

An afternoon of heartfelt conversation and a scrumptious meal 💕

Anjali had made the most scrumptious meal for our inaugural lunch together, all lovingly prepared and ready to be shared. We just hung out over lunch and chatted for hours LOL about everything and anything haha 💕🥰😃.

A menu worth replicating

Every single dish was outstanding. I loved everything Anjali made! It was a feast with each dish different from the next, with a wonderful play on flavors. I am going to get the recipes for everything!

Burrata and Mangoes with Fresh Basil 🥭🌿

This burrata with mangoes was the most original dessert I’ve had! So fresh and delicious and easy to make – it really is very creative and unique.

The beauty in this dessert is in its simplicity and sophistication. Fresh burrata cheese with fresh cut mangoes all garnished with fresh basil, white balsamic vinegar, olive oil, pistachios, salt and pepper. Doesn’t that sound wonderful?

The flavors – oh my! It’s an amalgamation of sweet, creamy, sour, salty and herby. A sophisticated dessert made with simple wholesome all natural ingredients. Give it a try!

Burrata and Mangoes with Fresh Basil

serves 2-4

Ingredients:

2 balls of fresh creamy burrata cheese. Anjali suggests using Di Stefano brand of burrata cheese if it’s available
3-4 perfectly ripe mangoes (Anjali makes it a point to tell me the mangoes have to be perfectly ripe but not mushy)
2 tbsp Peach white balsamic vinegar or any fruity white balsamic vinegar. If you don’t have, use honey
Mild olive oil – about 1 tbsp
Fresh basil leaves
Pistachios – 1-2 tsp
Salt and pepper

Directions:

Cut mango into small chunks. In a bowl or platter place the burrata cheese in the center. Surround the cheese with mango. Cover and chill until ready to serve.

Right before serving, tear a few sprigs of basil leaves and place on top of cheese. Drizzle the cheese with white balsamic vinegar, little olive oil and sprinkle of sea salt and black pepper. Top with pistachios and serve right away.
