Indian Masala Buns

I think it’s this crazy cold rainy weather we have been having this winter that has me craving spicy buns. I don’t recall such a rainy and cold winter in years. This weather has me craving bread, rolls, and things that make us feel warm and toasty.  So I thought I would give making Indian buns a go and looked up a bunch of recipes and this one from looked so easy to make with step-by-step instructions that I just had to make them right away! The only ingredient I didn’t have was yeast, which I promptly went and bought.

The Back Story: A friend’s nostalgic childhood memories

Truth be told I had never tasted Indian masala buns until my dear friend Radhika made them one time when I had gone over for tea, I’m talking over a decade ago! She fondly reminisced of her Dad making them for her and her brother when she was growing up in Morocco as she served them to me nostalgically.


I can honestly say I haven’t had these buns since then. That was the first and last time I had masala buns – it’s been a long time! I don’t know why then, recently I have been craving home made bread but not just any bread –  savory Indian masala buns jazzed up with onions, green chilis and spices.


A no egg bread recipe

yummytummy Aarthi calls these buns a crowd pleaser and boy were they a huge hit! Light and fluffy, oniony and spicy, these are delicious savory buns.


This recipe is so easy to follow with photos of every single step in the recipe that there really is no room for error.  And for those folks who are on the lookout for an egg-free recipes, this recipe has no eggs!  If you are craving some carby feel-good herby oniony spiced buns you have to give this recipe a try!


Indian Masala Buns

  • All Purpose flour / Maida – 3 cups
  • Warm Milk – ½ cup
  • Warm Water – ½ cup or as needed
  • Dry Yeast – 1.5 tsp
  • Sugar – 2 tsp
  • Salt to taste


  • Oil – 3 tbsp
  • Fennel Seeds – 1 tsp
  • Cumin Seeds – 1 tsp
  • Onion – 1 large sliced thinly
  • Garlic – 6 cloves chopped
  • Green Chillies – 1 chopped finely
  • Curry leaves a handful
  • Salt to taste


  • Milk – 2 tbsp
  • Oil – 3 tbsp
  • Chilli flakes – ½ tsp
  • Oregano – ½ tsp
  • Salt a pinch

Saute onions, chilli and garlic
Activate the yeast
Mix in the flour
Add the onion mixture
Let the dough rest for 2 hours
Roll into buns and bake
Soft fluffy savory buns are ready

Serve with butter for the most delectable homemade savory buns ever!
