I think it’s this crazy cold rainy weather we have been having this winter that has me craving spicy buns. I don’t recall such a rainy and cold winter in years. This weather has me craving bread, rolls, and things that make us feel warm and toasty. So I thought I would give making Indian buns a go and looked up a bunch of recipes and this one from yummytummyaarthi.com looked so easy to make with step-by-step instructions that I just had to make them right away! The only ingredient I didn’t have was yeast, which I promptly went and bought.
The Back Story: A friend’s nostalgic childhood memories
Truth be told I had never tasted Indian masala buns until my dear friend Radhika made them one time when I had gone over for tea, I’m talking over a decade ago! She fondly reminisced of her Dad making them for her and her brother when she was growing up in Morocco as she served them to me nostalgically.

I can honestly say I haven’t had these buns since then. That was the first and last time I had masala buns – it’s been a long time! I don’t know why then, recently I have been craving home made bread but not just any bread – savory Indian masala buns jazzed up with onions, green chilis and spices.

Indian Masala Buns

- All Purpose flour / Maida – 3 cups
- Warm Milk – ½ cup
- Warm Water – ½ cup or as needed
- Dry Yeast – 1.5 tsp
- Sugar – 2 tsp
- Salt to taste
FOR ONION MIX:
- Oil – 3 tbsp
- Fennel Seeds – 1 tsp
- Cumin Seeds – 1 tsp
- Onion – 1 large sliced thinly
- Garlic – 6 cloves chopped
- Green Chillies – 1 chopped finely
- Curry leaves a handful
- Salt to taste
FOR TOPPING:
- Milk – 2 tbsp
- Oil – 3 tbsp
- Chilli flakes – ½ tsp
- Oregano – ½ tsp
- Salt a pinch
