The occassion
I made this quinoa salad for a weekend family dinner celebrating the Indian festival of Rakshabandan which is a festival celebrating the bond among siblings. During the festival siblings tie a thread bracelet called Rakhi on each other to signify their bond, and pledge to be there for each other through the good times and the tough times 💕🥰.














I had made a big bowl of quinoa salad among other items for dinner, and with all the food we had, I had a lot of salad leftover.

You know what? The salad tasted even better the next day and even better the day after that when I served the salad again as a teatime treat when my friend Rose came over on Monday.









About the recipe
This is an awesome recipe when you want to make something ahead of time and serve it the next day. Cooked quinoa is mixed in with cucumbers, peppers, kale, onions and chick peas that are all tossed with a lemon vinaigrette.


As the salad is sitting in the refrigerator the quinoa and chick peas get a chance to absorb the vinaigrette dressing while the kale gets a chance to soften as it marinates over night. You can also add in feta cheese if you like or leave it out.

What is surprising is how the veggies stay firm, fresh and crunchy for upto two days!

Delicious, filling, and wholesome give this winner of a salad a try!

Quinoa Salad with Kale Peppers and Chick Peas
Ingredients:
1 cup cooked quinoa
1 can chick peas rinsed
2 cups finely cut kale
4 mini peppers sliced
1 small Persian cucumber sliced
1 small onion thinly cut
1 garlic clove minced
Feta cheese if you like
Lemon honey vinaigrette
Directions:
In a bowl combine quinoa, kale, chick peas, peppers, onions, and garlic. Add desired amount of dressing and coat all the ingredients. Add feta cheese if you like. Cover and refrigerate until ready to serve.




Quinoa salad lasts upto 3 days in the refrigerator.
