Avocado Salad with Cherry Tomatoes

Want to make a quick salad in as few as five minutes?  No dressings involved. Just cut and plate, drizzle with vinegar and olive oil, sprinkle salt and pepper, and the salad is done. Try this avocado salad with cherry tomatoes.

Avocado Salad with Cherry Tomatoes

Ingredients:

  • 2 avocados cut into wedges
  • 1 small red onion finely chopped (1/2 cup)
  • 1 cup cherry tomatoes halved
  • Juice of 1 lemon
  • 2 tbsp sweet balsamic vinegar
  • 2 tbsp olive oil
  • Salt & pepper
  • Some sprigs of cilantro for garnish

Directions:

  • In a serving platter place the avocado slices. Evenly distribute the cherry tomatoes over the avocado.  Sprinkle with chopped red onions.
  • Squeeze juice of 1 lemon all over avocado, onions and tomatoes. Sprinkle salt and pepper. Gently drizzle 2 tbsp balsamic vinegar and olive oil over all the ingredients.
  • Garnish with fresh cilantro and serve.

    As promised after reading the blog posting with the avocado and cherry tomato salad last week, I followed through and made it. The first time was on Sunday ( mother’s day) and I did it again today! It’s my favorite salad now for sure. I made a couple of very slight modifications. Added yellow cherry tomatoes​ and basil instead of cilantro. As you can see William can’t wait to tuck in:) Dinner alfresco tonight.

      1. I almost did. I exchanged the red onions, that I didn’t have for garlic sprouts. The salad was delicious, and I’ve made it several times 🙂 Thank you! I am sure I will be making it a lot more in a few weeks, when my cherry tomatoes a ripe. How is your vegetables doing?

        1. Oh how cool! I’ll have to try this salad again with garlic sprouts – what are garlic sprouts?

          My veggie patch is finally putting on some growth. We have had mild temps – 60s and 70s, but the last week we got some 8os and I see the veggie seedlings right away got bigger and are setting flowers. Thanks for asking 😊

          1. I actually decided to make the salad again, after your comment the other day. When you plant garlic cloves in soil, it takes a long time to get a whole garlic, but meanwhile the green spouts (looks like grass,) that comes up within a few days is delicious. I cut it off and use it in salads, dressings, soups, and stews. It just keeps coming. I like that at least as much as I like the actual garlic. Try planting some garlic cloves in a container, and you can try it yourself within a week. They like to be in the sun.

            How exciting with your garden!! You’re going to have your own veggies very soon 🙂

            1. Thanks for the info on garlic sprouts. I will give growing garlic in a pot – I love growing plants in pots!! All my family and friends know I have a pot addiction (not canibas 😀 but plant pots).
