Cucumber and Green Onion Raita

With so many garden fresh cucumbers delivered by my neighbor, I had already made cucumber salad and cucumber sandwiches and still had loads of cucumbers left over. I was wondering what else I could make when this cucumber and green onion raita seemed like a perfect summer dish. Served as a side dish along with fried rice or served as a dip, this is a great way to use op cool summer cucumbers.

Cucumber and Green Onion Raita

Ingredients:

  • 1 English cucumber finely cut
  • 2-3 stalks of green onion finely cut
  • 3 cups plain yogurt
  • Salt
  • 1/2 tsp paprika
  • 1 tsp cumin powder
  • Fresh cilantro for garnish

Directions:

  • Mix the yogurt, cucumber, green onions, and salt together.
  • Next add the cumin powder and paprika and mix-in.
  • Garnish with cilantro. Store in the refrigerator until ready to serve.

    Ralta is a salad or side dish. (I looked that up, because I haven’t really understood all things about Indian food and I wasn’t sure if this wasn’t something that needed something else to eat it and apparently not!)

  2. Kalpana, your post on Cucumber & Green Onion Raita looks really good. I make it quite often since Del likes Raita. Instead of using green onion, I generally use red onion. Like you mentioned there are many variations in Raita.
    Back home, my mother used to make eggplant Raita,
    Beets Raita, capsicum Raita and bitter melon Raita among others.
    As always , I enjoy reading all your posts and try some of the recipes.
