Gooey, cheesy, sweet and delicious, this is one yummy grilled cheese. A very different variation of our beloved grilled cheese – this one tastes a little more gourmet.
What makes it so good? For one its made with a combination of creamy goat cheese and white cheddar. And two it has shallow fried sweet peppers and onions that are drizzled with a touch of honey. This is not our typical grilled cheese as this one really does taste gourmet. I think we could even serve it as an appetizer all cut into bite-sized pieces.
About the recipe
The recipe was created by my daughter Rani who is a huge goat cheese fan. In fact I’ve featured many of her recipes here and they probably all have goat cheese 😀. In this warm sandwich goat cheese adds creamy texture while the sharp cheddar adds a nice tang.
Bell peppers add wonderful sweetness in the sandwich and when you drizzle in a touch of honey, you really get a sweet and savory chutney type of flavor. If you can handle the heat, don’t skip the chili flakes! Just a pinch goes a long way to add a kick of spiciness that is very satisfying. Goat Cheese Bell Pepper Grilled Cheese with Honey

4 slices sourdough bread one side of each slice buttered.
1 red bell pepper cut into thin slices
1 yellow bell pepper cut into thin slices
1 small onion finely cut
Creamy goat cheese about 6 tbsp
1/2 cup shredded sharp white cheddar
Salt and pepper
Chili flakes (optional)
Warm 3 tbsp butter in a saute pan. Add the peppers and onions and fry until veggies are tender. Remove from the pan and set aside.
Get ready to make the grilled cheese: Spread goat cheese on the unbuttered side of the bread. Evenly spread the pepper onion mixture. Top with cheddar cheese. Drizzle with honey. Sprinkle salt, pepper and chili flakes. Place another slice of bread on top (the buttered side should face up).
In the same saute pan place the sandwich and warm through until both sides are golden in color and the cheese is melted. Grilled cheese is ready!
