Zucchini Fritters

What is summer without zucchinis? These veggies are a summertime bonanza. One would think zucchini won the summertime veggie lottery, they can be found in abundance this time of year. So if you are like me and wonder what more can I make with these veggies, here is a fabulous recipe – these light zucchini fritters.

About the recipe

I had these delicious zucchini fritters this summer at a dinner party hosted by friends Shalini and Aditya. On this cool summer evening Shalini had prepared a wonderful North Indian style dinner, and for appetizers she had prepared these delicious zucchini fritters.

Crispy on the outside, tender on the inside even better is how easy these fritters are to prepare. Shalini graciously shared her recipe and I made them recently for a light evening snack, and the family loved them!

Easy recipe

All you do is mix grated squash, flour, an egg, parmesan cheese along with onions and garlic. Then shallow fry them until golden brown. That’s it. Easy, delicious and healthy, these fritters make for a fabulous light appetizer or afternoon bite. Give it a try!

Zucchini Fritters

Ingredients:

1 1/2 pounds or 3 cups shredded zucchini or squash
1/4 cup flour
1/4 cup parmesan
1 tsp salt
Black pepper to taste
Finely chopped onion – as much as you want
2 garlic cloves crushed
Olive oil

Directions:

Place grated zucchini in a colander with 1 tsp salt and gently combine. Let sit for 10 minutes. Then squeeze the water out of the zucchini and place in a mixing bowl.


In a large bowl combine zucchini, onions, garlic, black pepper, 1 egg, flour and parmesan.

Heat 4 tbsp olive oil on a pan. Using a tablespoon place dollops of batter on the pan and flatten with a spatula. Cook until the fritters are golden brown about 2 minutes, then flip them over and continue to cook for 1-2 minutes longer.

Remove from pan and serve with any hot sauce or ketchup.
