Happy Friday! Today I’d like to share with you this recipe for a cocktail that takes fresh summertime peaches and turns them into a wonderful margarita full of flavor.

We have peaches ripening in home gardens all over town. Beautiful delicious peaches ready to be consumed. But like any summertime fruit when they are ripe they need to be eaten right away, and if you can’t get to them soon, give this cocktail a try.

Our daughter Anjali made these margaritas for our Saturday night stay at home taco dinner. The margarita was creamy, fruity and refreshing. This recipe comes to you from Givemesomeoven and is a wonderful way to summer up your margarita.

The recipe calls for fresh ripe peaches that are first turned into a puree. Then the puree is mixed in with margarita ingredients such as tequila, lime, and agave syrup. Our very ripe peaches were on the sour side so we did have to adjust the agave syrup upward to sweeten the cocktail a little more.

Fresh Peach Margaritas

Makes 1 margarita

Ingredients:

• 1/3 cup fresh peach puree (*see instructions below*)
• 2 ounces silver tequila
• 1.5 ounces lime juice
• 1 ounce Triple Sec (or freshly-squeeze orange juice to make it lighter)
• 1 Tablespoon agave or honey (we used 2 tbsp as we found our margarita to be on the sour side)
• Optional garish: rim salt and fresh peach slice

Directions:

1. Make fresh peach puree: Peel and pit a fresh peach and puree it in a blender until smooth. 1 medium peach = approximately 1/2 cup puree (but measure to be sure). Use 2 if needed and make sure its really ripe to get that soft peach puree.
2. Add all ingredients together in a shaker. Shake for 15 seconds until combined. Serve over ice in a glass that has been rimmed with salt and garnished with a fresh peach slice.
