When I want a change from my usual vinaigrette, I like to make a Fig Jam Vinaigrette, which is sweeter, thicker, and has a wonderful Mediterranean fig flavor along with little bits of mashed figs.

Used to be I could only find fig jam at specialty grocery stores, but nowadays fig jam can be found at most grocery stores in their deli section. For a thicker salad dressing packed with sweet fruit flavor, give Fig Jam Vinaigrette a try!

Fig Jam Vinaigrette Dressing
Ingredients:
- 1 tbsp fig jam
- 6 tbsp balsamic vinegar
- 1/4 cup olive oil
- Salt & pepper to taste
Directions:
In a small bowl whisk together fig jam, vinegar, salt and pepper until thickened and creamy.

Next add olive oil and whisk until well blended.

Taste and adjust for salt, add more jam for more sweetness, or more vinegar for more sourness.

Vinaigrette is ready to toss in salad.

Wow. This must taste very good.
