Eggplant Leek Pasta with Burrata Cheese

With an entire large Italian eggplant, leeks, and peppers this is a tomato based pasta that’s loaded with veggies and made even more delicious with marinara sauce and burrata cheese.

I made this eggplant leek pasta for a dinner with friends that turned out phenomenal.

Fabulous make ahead dish

This is an awesome make ahead dish so you can relax in the evening with family and friends. Just make the veggies and pasta ahead of time. Then right before serving it for dinner, add the jar of marinara sauce and warm through until bubbly and then melt in the burrata cheese. A quick evening pasta where the bulk of the work is done way in advance.

Easy recipe with stupendous flavor

With lots of flavor from sauted eggplant, leeks and peppers all tossed in marinara sauce and then made creamy with burrata cheese, this pasta is a full bodied, lots of flavor, and not a demure pasta by any means.

A fancy pasta that’s easy to make.

Fry up leeks, garlic, peppers and eggplant until tender. Then add in cooked pasta and a jar of marinara sauce. Warm everything together and then melt in burrata cheese. That’s it. A delicious pasta with lots of veggies and lots of flavor.

Eggplant Leek Pasta with Burrata Cheese


1 large Italian egg plant finely cut
1 bell pepper cut into small pieces
2 leeks white and light green parts finely cut
5 cloves garlic minced
Pinch of chili flakes
1 jar of marinara sauce
Olive Oil
1lb rigatoni pasta
2 balls of burrata cheese
Parsley for garnish


In a large pot warm 3 tbsp olive oil. Add the leeks and garlic and shallow fry until leeks are tender. Add the chili flakes and stir, then add the eggplant and peppers plus 1 tsp salt. Cook the veggies for 10 minutes until the eggplant is tender.

While the veggies are cooking cook the pasta according to package directions. Save 2 cups pasta water before draining. You will use this water later.

Add the cooked pasta to the veggies and stir in. If you are serving this for evening dinner with guests wait to add the marinara sauce and burrata cheese.

When ready to serve add the jar of marinara sauce plus the pasta water. Warm the pasta until hot. Then add the burrata cheese and melt.

Serve right away with garnish of fresh parsley.
