Leeks and 12 Cloves of Garlic Pasta

Leeks and Lots of Garlic

Living in the Bay Area we can’t help but love garlic especially as our region grows 80% of the garlic supplied to all of the U.S. We even host a garlic festival every summer, that’s how big a part of our cuisine garlic is here.

Lots of garlic and leeks are what give this pasta it’s unique green onion and garlicy flavor.

Garlic and leeks are cooked in olive oil until tender and then stirred into marinara sauce. This delicious sauce is then poured over cooked penne and mixed together.

This pasta was made by daughter Anjali for my Mother’s Day dinner and it was outstanding! It has lots of garlic as in 12 cloves of garlic! It may seem like a lot but when it’s slow cooked with leeks it becomes all sweet and soft and yummy.

Serve pasta warm with fresh basil and you’ve got a wonderful feel-good pasta on any day of the week.

Leeks and 12 Cloves of Garlic Pasta

Ingredients:

1lb penne pasta cooked according to package directions. Drain and set aside.
1 jar of marinara sauce
2 leeks finely cut
12 garlic cloves thinly sliced
Olive oil
Chili flakes – as much as you want
Salt and pepper to taste
Basil

Directions:

In a large pot warm 2 tbsp olive oil. Add the leeks and garlic and cook on low heat until the leeks are tender – about 5-8 minutes. Add the chili flakes at this time if using.

Next add the marinara sauce to the leeks and warm though. When the sauce is bubbling add the cooked pasta. Stir together and warm through for couple more minutes. Taste and adjust for salt if needed. Pasta is ready.

Serve warm with fresh basil.
