Christmas Salad 🎄. Kale, Beets, Carrot and Feta Salad

Happy Christmas Eve Eve!! Hello and Happy Holidays! Are you looking forward to a fun and relaxing holiday season? Today I’d like to share with you a recipe for a delicious salad called Christmas Salad 🎄😄. Called this because of the green, red and white in the salad 😄.

About the recipe

I had this delicious kale and beets salad at our cousin’s holiday party recently. Made by niece Vidya, she called it a Christmas salad because of all the holiday colors in the salad – green kale, red beets, and white feta 😄. Really flavorful, hearty and so pretty this salad is. Give it a try this holiday season!

Christmas Salad 🎄. Kale, Beets, Carrot and Feta Salad

Ingedients:

1 bunch of kale washed and loosely torn into pieces
Beets – you can buy pre cooked from the grocery store
Baby carrots – as much as you want
Feta cheese – as much as you want
Toasted pecans – 2-4 tbsp
Olive oil
Vinaigrette:
4 tbsp olive oil
1 tsp rosemary
4 pickled peppers finely diced with their juices
1 tsp sea salt
Black pepper to taste

Directions:

Roast the carrots until tender. Toss them with olive oil and pinch of salt. Roast the carrots on a cookie sheet in a 375F oven 20 minutes. Take out of the oven and set aside to cool.

Whisk the vinaigrette ingredients together. Taste for salt and adjust accordingly. Set aside.

Place the kale, carrots, and beets in a bowl. Start adding the dressing little at a time and toss everything together. Add as much dressing as you want until the salad tastes good to your liking.

Cook’s Notes: You can make this salad ahead and keep it in the refrigerator until ready to serve.

Right before serving top with feta cheese and toasted pecans .
