Pan-Seared Tofu with Broccoli & Peppers
serves 2-3

Ingredients:

  • 1 box extra firm tofu
  • 2 bell peppers cut into long strips or 10 small peppers cut lengthwise
  • 4 cups broccoli florets
  • 6 cloves garlic
  • 1 tsp crushed ginger
  • 4 tbsp Asian inspired braising sauce or marinade sauce
  • Oil

ANZAC Biscuits

When I hosted this year’s garden party there were a lot of pretty cool and interesting cuisine.  One of the goodies was ANZAC biscuits brought by my friend Susan.  When Susan asked if she could bring ANZAC biscuits, I had never heard of these before and having grown up in Texas, when I think of biscuits I think of fluffy biscuits you have with butter and jam, or biscuits and gravy.  Susan explained that actually these aren’t biscuits the way we Americans think of them, but rather these ANZAC biscuits are more like oatmeal cookies.  Cool I thought, and asked Susan to bring them. These enchiladas are super easy to make with stupendous results. The best part? All the ingredients are easy to find and already prepped for you. Just toss them together, stuff in tortillas, top with sauce and bake. A one pot meal that’s easy and satisfying!

Every year my cousins Mahesh and Nando and their families are invited for Rakshabandan dinner at our home.  We started the tradition of celebrating Rakshabandan over a decade ago.  It usually falls in the late summer so we try to have dinner outside giving us an opportunity to enjoy the cool evening with drinks and dinner.
