Caramelized Shallots and Ricotta Frittata

I made a caramelized shallots, baby spinach, and ricotta stuffing for ravioli that Rani and her friends were making from scratch at her birthday party, and I ended up with some extra stuffing leftover. Caramelized Shallots, Spinach and Ricotta Ravioli. The stuffing was so delicious that I used it the next day to make a fluffy frittata.

Edible Flower and Herb Embellished Goat Cheese

For her birthday Rani wanted to hang out with her friends in our garden. The timing was perfect, as I had just attended a book-signing event from authors Stefani Bittner & Alethea Harampolis on their new book Harvest.  I was eager to try something from the book and Rani’s birthday picnic became the perfect opportunity to make a goat cheese recipe with edible flowers and herbs for this soiree.

Mushroom Quiche on Whole Wheat Crust

Mushroom Quiche on Whole Wheat Crust:
makes 3 quiche pies

Ingredients:

  • 2 whole-wheat frozen pie crusts
  • 6 cups finely chopped mushrooms
  • 5-6 cloves finely chopped garlic
  • 1 bunch chives finely cut about 2 -3 tbsp
  • 2 tsp dry herbs like thyme, rosemary, oregano
  • 8 small sage leaves (optional)
  • Salt and pepper
  • 8 eggs
  • 1 cup sour cream
  • 2 cups milk
  • 1 1/4 cup parmesan cheese
  • 2 cups Swiss gruyere cheese shredded
  • Olive oil

Spinach & Super Greens Cheese Enchiladas

Folks, this is the easiest recipe to make with the most stupendous results.  These awesome enchiladas are nutritious, delicious, and look delectable too. With over 8-10 cups of chopped spinach and other healthy greens like baby kale, turnip greens and chard, these enchiladas might as well be called super greens healthy enchiladas.

Tiramisu

A dessert in 15 minutes?  I couldn’t believe how fast we made this classic Italian dessert- tiramisu. This tiramisu recipe is from our friends Dave and Rose’s cooking lesson in Tuscany, Italy last Fall. The recipe surprised me with how easy it was to make a delicious and decadent classic Italian dessert.

Roasted Mushrooms, Peppers, Paneer Curry

Every time I roast mushrooms for a pasta dish or quiche or even as an appetizer it always occurs to me that these gorgeous roasted mushrooms would taste wonderful with some Indian spices. I finally decided one day to make that roasted mushroom curry I’d been thinking about for a long time. I added paneer (pressed curd cheese) to the dish to give it some substance, but you can also use tofu or any meat of your choice instead.  Here is the recipe.
