This is a teacake recipe that I came up with inspired by the giant zucchini our friend Karen dropped off from her garden. I had already made a Zucchini Curry and a Zucchini Soup with this giant squash. The next dish had to be something sweet and a teacake seemed like the perfect treat for this super tender zucchini.

I made a caramelized shallots, baby spinach, and ricotta stuffing for ravioli that Rani and her friends were making from scratch at her birthday party, and I ended up with some extra stuffing leftover. Caramelized Shallots, Spinach and Ricotta Ravioli. The stuffing was so delicious that I used it the next day to make a fluffy frittata.

I recently made a couple of hummingbird cakes to show of some gorgeous nasturtium blossoms that were blooming in my springtime garden. I made one cake with cream cheese frosting, shredded coconut, and orange nasturtium flowers; and a second cake decorated with yellow nasturtiums, pecans and edible leaves and flowers.

What got me motivated to make a hummingbird cake this spring is the opportunity to decorate the cake with spring blooming nasturtiums. These nasturtium blooms were looking so glorious in my springtime garden that I wanted to show them off in a beautiful dessert. Mushroom Quiche on Whole Wheat Crust:
makes 3 quiche pies
Ingredients:
- 2 whole-wheat frozen pie crusts
- 6 cups finely chopped mushrooms
- 5-6 cloves finely chopped garlic
- 1 bunch chives finely cut about 2 -3 tbsp
- 2 tsp dry herbs like thyme, rosemary, oregano
- 8 small sage leaves (optional)
- Salt and pepper
- 8 eggs
- 1 cup sour cream
- 2 cups milk
- 1 1/4 cup parmesan cheese
- 2 cups Swiss gruyere cheese shredded
- Olive oil
