Think strawberry shortcake but in a cobbler form, that’s what this dessert tastes like. Served with whipped cream and pistachio ice cream, it’s the perfect summertime dessert. Give it a try!


The occasion
My daughter Sri invited me and a couple of our friends to an afternoon tea on a warm May afternoon couple weeks ago. On the menu were a variety of light afternoon bites, one of them being this delicious fresh strawberry cobbler made by friend Donna.






In this dessert fresh strawberries are baked in a cobbler. When the strawberries are cooked all gooey and juicy, they taste like jam! Serve it with whipped cream or pistachio ice cream and it’ll really scream summer on a plate 🍓🍽😋!

My friend Donna describes the recipe as “So easy.” I made it and the cobbler really is very easy to make. The most work in this dessert is cutting the strawberries 🍓.

When I say the recipe is easy – it really is! Cut strawberries and mix them with sugar. Then in another bowl mix all the cobbler ingredients together. Pour cobbler batter into a buttered baking dish and top with strawberries. Then bake for 45 minutes. The result is a delicious fresh strawberry cobbler that tastes like strawberry jam and cake 🍓🍰😋.







Cook’s Notes: If you don’t have strawberries, that’s okay! Try it with summer fruit like peaches, apricots, nectarines or blueberries or blackberries.
Fresh Strawberry Cake

Ingredients:
2lbs strawberries
1/3 cup sugar
For cobbler batter:
1 1/2 cups flour
2/3 cups sugar
2 1/2 tsp baking powder
1 1/4 cups milk
2 tsp vanilla extract
1/2 tsp salt
2 sticks butter – 9-10 tbsp butter
Directions:
Preheat oven to 350F. Add 9 tbsp unsalted butter to a baking dish and melt in the preheated oven for about 10 min.

Slice 2lbs of strawberries and macerate with 1/3 cup sugar by combining strawberries with sugar and let it sit for 15 minutes. Set aside.


Make the batter: Combine all purpose flour, sugar, baking powder and salt. Then add the milk and vanilla extract and make a batter.


Pour this batter over the melted butter in the baking dish. Evenly lay the cut strawberries on top without the juices that get released.


Bake for around 45-50 minutes till the top is golden brown.



Serve with whipped cream or vanilla ice cream. Enjoy 🍓
