Dinner planning for the week

Hello and Happy New Year! How are the first few days of the new year? Have you made any new year goals or plans? I have a few but the one that I wanted to share with you here is my objective of menu planning dinners for the week.

I know menu planning for the week is an age old concept and I’ve been on and off this band wagon over the years. But recently I decided to get back into it and make menu planning dinners for the week a priority. It makes dinner time easy. I’m not stressing about what to cook, I have a plan. I may move things around like maybe switch up Monday’s dinner to Wednesday or Friday’s dinner to Monday – but at least I have a clear idea of what I’m going to make for dinner this week.

The menu planning for me is based on what ingredients I have at hand in my farm box, a craving I may have, or what my kids and husband want to have for dinner this week. It’s a combination of healthy dinners like a veggie stir fry with quinoa and dhal, or something more decadent like a creamy pasta.

So here I am starting to menu plan for the week and I thought maybe you folks might be interested in seeing what’s cooking this week in my kitchen? Maybe you see something that gives you ideas for dinner?

Thursday Greens and Sweet Potato Curry with Dhal and Quinoa

Friday Creamy Sun Dried Tomato and Bell Pepper Pasta with a Salad

Saturday – Out for dinner

SundayMinestrone Soup with chickpeas
