Here is a recipe for a salad with our favorite Mexican flavors. What makes it so? Lemon Honey Mustard Vinaigrette

I’ve been making this lemony sweet mustard vinaigrette a lot lately especially as fresh lemons are in abundance in our area right now. The combination of fresh lemon juice and honey is always a winner for a fresh tasting salad dressing, but add a little mustard and you get a vinegary spiciness that adds another layer of flavor that is delicious.

Orange Dijon Vinaigrette

Orange Dijon Vinaigrette is a recipe I collected from my friend Deb whom I recently saw at a holiday luncheon where she had brought an arugula and spinach salad with persimmons, orange, and pomegranate. This salad tasted outstanding! Not only was the combination of greens and fruit perfect, the dressing made the salad taste even better.
