This delicious recipe comes to you all the way from Vadodara, India. It’s a an okra stir fry made with spices, onions and tomatoes that are cooked together to perfection.

About the recipe
This delicious okra stir fry was served to us for lunch when we visited my son-in-law – Pranav’s family in India some time back. Nanda, Pranav’s uncle whom we discovered is a phenomenal cook had made his okra dish for our lunch. The okra stir fry was so flavorful that I could have finished off the entire bowl and not left any for others.


About the recipe
Spices such as garam masala, cumin powder, coriander powder, turmeric and asafetida add wonderful aroma and flavor in this okra stir fry. The dish is easy to make too.

First, roast okra in the oven with olive oil for 30 minutes. This gets rid of the slimy texture that okra gets when it’s cut. While the okra is roasting, shallow fry onions and tomatoes. Then add the spices . Lastly mix in the roasted okra, add salt to taste and cook everything together for 3-4 minutes. You get a delicious okra stir fry that’s perfect with naan, chapati or daal and rice. Give it a try!






Okra Tomato Onion Stir Fry

Ingredients:
2lbs okra. Cut length wise or into small pieces
1 medium tomato finely chopped
1 large onion finely cut
Fresh cilantro for garnish
Spices:
1 tsp cumin seeds
1 tsp asafetida powder – hing
1/2 tsp turmeric powder
1/2 red chilli powder or as much as you want
1/2 tsp Garam masala,
1 tsp coriander powder
1 tsp cumin powder
Salt
Oil
Directions:
In a baking sheet toss together the okra with a tbsp of oil. Place in a 400F oven and roast for 30 -40 minutes, stirring them around at the 15 minutes mark. Okra should be tender and cooked through. Set aside.

In a large wok or pan warm 2 tbsp oil. Add the cumin seeds and fry for a 2-5 seconds until they turn brown. Add the onions and cook the onions until translucent. Then add the asafetida powder and all the spices – garam masala, cumin powder, coriander powder and turmeric and chili powder if using. Next add tomatoes and cook until the tomatoes are tender.




Once the tomatoes are tender add the roasted okra plus salt to taste. Gently mix together and cook for an additional 3-5 minutes. Okra stir fry is ready.



Garnish with fresh cilantro and serve with chapati, naan or daal and rice.

This sounds wonderful. I have been seeing some okra at our local farmers market, not a common crop around here.
Thank you Dorothy. So true okra is not a common western vegetable, but its so good for you and packed with nutrients. It is a rather slimy veggie which turns some people off, thats why I like to roast them to get rid of that texture.
It’s quite popular in the south, but not so much here. It probably has a longer growing season?
