Iya’s Vitamin Salad with Miso Dressing

My friend Iya brought this delicious and refreshing coleslaw style of salad to our garden party a while back that was enjoyed by all. It was crunchy, sweet and salty, with an Asian inspired dressing. Part of the beauty of this salad is the gorgeous, thinly cut, colourful vegetables. When cut in this way, the veggie flavors come out perfectly in this delicious salad.  I asked Iya for the recipe and also invited her to come over and show me how to make her salad. Super Easy Super Delicious Super Quick Vegetarian Tacos & Taco Salad

On warm summer days tacos piled high with fresh vegetables and packed with well-seasoned kidney beans is a positively satisfying meal for lunch or dinner. This is the easiest recipe to pull together with the most stupendously delicious results.  These tacos are packed with good for you legumes such as kidney beans, chock full of leafy greens, fresh tomatoes, delicious salsa, sour cream, and a dash of shredded cheese.

These vegetarian tacos are so good that you will have not just one or two, but three or four. Sunday Soups to Sunday Salads

It’s June already and it’s getting warm around here in Northern California. Roses are blooming, lilies too, dahlias are sprouting, and pretty much every type of flower you can think of is blooming right now. We are swimming in color at this time of year. Perfect inspiration for making wonderful light and colorful salads.

I am always thrilled to hear that the recipes I post are so well received and most of all that they are being tried in your home kitchen. But truth be told, the most popular recipes are my Sunday Soups. So many of you have told me time and time again that you love my Sunday Soup tradition and are enjoying making the soup recipes I post.  To you all, I especially want to apologize, as I will be taking a break from Sunday Soups. The weather is warming up finally making it a great time to enjoy a colorful salad, so I am taking a hiatus from Sunday Soups and switching over to Sunday salads.

Braised Warm Sugar Snap Peas & Edamame Salad

Warm Sugar Snap Peas & Edamame Salad

Ingredients:

  • 2 cups sugar snap peas roughly cut in halves. About 8 oz of sugar snap peas
  • 1 cups shelled edamame beans. I buy mine frozen and already cooked from Trader Joe’s
  • 1 clove garlic crushed
  • Juice of 1/2 small lemon
  • 1/2 tsp chopped mint leaves
  • Salt and pepper

Greens, Grapes and Avocado Salad

Greens, Grapes and Avocado Salad
Makes 4 servings

Ingredients:

  • 2 Avocados cut into wedges
  • 2 bags of super greens or a mix of spring greens. About 4 cups
  • 1 bunch of red grapes – 8 grapes cut in half, 8 grapes left whole
  • 1 tbsp toasted pumpkin seeds
  • 1 tbsp roasted salted pistachios
