William’s Carrot Ginger Soup

I had the most delicious soup when we were invited to dinner at our friends Stella and William’s place one evening late last summer. Going to their home for dinner is always a fun treat. On this evening Stella and William had prepared a delicious meal of carrot ginger soup, vegetable lasagna, and a couple of local Ghanna dishes such as a thick well-seasoned stew and fried plantains. Everything was delicious. One of our favorite dishes was the carrot ginger soup which was in a league of its own. It was not your run of the mill carrot ginger soup, this was creamy and sweet with herbs and just the right amount of heat from the ginger; and the best part is that it was the easiest soup to make. Roasted Butternut Squash & Red Onion Soup

It’s Fall and butternut squash can be found everywhere in the grocery stores. Even the restaurants around town have butternut squash as a main staple in a lot of their dishes. A popular item on menus is butternut squash soup. There are so many variations of this recipe. I’ve had an Asian inspired soup with coconut milk and curry powder, I’ve made a recipe that involved just cooking the squash in broth with herbs, I’ve had versions that included sweet potato in the butternut squash soup, and a version with carrots. But the recipe that is my all time favorite is this Roasted Butternut Squash & Red Onion Soup. I like how the squash and red onions caramelize in the oven so beautifully which gives the entire soup a lovely brown sugary sweet flavor.  Continue reading Roasted Butternut Squash & Red Onion Soup

Cauliflower and Roasted Garlic Soup

I made this soup the first Sunday of the New Year after the holidays.  It was time to get back into the Sunday Soup routine that I had started last year.  Everyone loved the idea of having soup on Sundays for dinner, and it made it easy for me too to plan the meal for Sunday – it was going to be soup, that’s it!
