Yummy, yummy, yummy is how I describe this delicious risotto 😋. I made this leek, zucchini and Swiss chard risotto specifically for my daughter Anjali who doesn’t like mushrooms, and since I was making mushroom risotto for my other twin Rani, I had to make something for Anjali, and this risotto was the one. I chose to make Anjali’s risotto with leeks, Swiss chard and zucchini as I had just bought these veggies from the Farmer’s market and this veggie risotto was the delicious result. Leeks and zucchini in a creamy risotto rice enhanced with goat cheese, this is one scrumptious risotto. Bay Leaf Cardamom Vegetable Daal

Zucchini Orange Cardamom Cake

This is a light and spongy cake with the lovely flavors of orange and cardamom. Zucchini Lemon Soup

The inspiration for a lemon zucchini soup was my abundance of lemons. Loads of lemons in baskets were forcing me to get creative with using them in my cooking. Since it was a Sunday and I always make soup for dinner on Sunday I made sure my soup whichever soup I made had lemons. This zucchini lemon soup is what I conjured up. It’s light and delicious with fresh lemon flavor and lots of vegetables. The entire family devoured this zucchini soup, I mean having two bowls each and cleaned the pot out completely, not leaving anything behind. They loved this soup 😋.  I hope you will too. Zucchini Teacake with Fresh Ginger & Allspice

This is a teacake recipe that I came up with inspired by the giant zucchini our friend Karen dropped off from her garden.  I had already made a Zucchini Curry and a Zucchini Soup with this giant squash. Zucchini Curry with Mushrooms & Paneer

I made this zucchini curry with mushrooms and paneer with a third of a giant zucchini I received from my friend Karen. This zucchini was huge and I had to come up with some creative ways to use this crudités.

My first dish was an Indian curry.  I was having some friends over for dinner and a fresh zucchini curry with mushrooms and paneer seemed like a perfect dish to make for the occasion.
